Traditional Japanese dining recs

Hello,

Wife and I enjoy a bit of fine dining on our trips. Any recommendations for fine Japanese dining? We are adventurous. It doesn’t have to be Michelin rated but it’s fine if it is.

Sushi Iwa has been fantastic both times I’ve been, though I believe there’s a significant savings in doing their lunch instead of dinner. 1 Star last I checked as well.
