Generally speaking, how you do add location and premise TAGS to the review?

That's done by the TAG manager as he reviews and approves assuming you linked to the shop's website or equivalent.

Location/Shop data is added in the review itself. (Ideally, they have a website and failing that, a social media link and hopefully a map link.)
All other information tags are done on our side when managing reviews.
