Can anyone recommend a hotel to spend the night in? This will be my first time staying in Tokyo, so I'm not sure what to look for in a hotel.

There's a capsule hotel in Akihabara that is popular with tourists. Google maps tells me it's called "Capsule Hotel Anshin Oyado Akihabara".

i booked a room with 1/3rd Residence Group when i was staying in akihabara, its not super cheap but the staff was great

The REM hotel next to Akihabara station is not bad. The rooms are tiny, but clean and comfortable. Basically a bed and shower. Good location too. I think around 12,000 yen.

Actually in this case it means both: スタンダードのシングルルーム。 お一人様でのビジネス・観光にぴったりのお部屋です。

They have different prices for two persons staying in one room, just read the site and you know.

90% of economy/business hotels charge by the person. If a room has a price for single it is meant for a single person and guests are generally not allowed to go up with you into the hotel room.

Also often booking for 2 people is only a little more expensive than for 1.
If you book for 2 then no prob having an escort in your room in almost all cases

If you look at the discount hotel websites you can often find 2 person room for as little as ¥7000+tax, but you have to book in advance, so you need to definitely know you're going to be at X place on Y date.
